dinner and dessert

we have been doing really good lately about eating at home. i used to make a menu and shop for two weeks at a time. for the past month or so ive been doing the menu for only one week at a time. that seems to work better for me, plus i dont waste as much produce or skip on the planned dinner because i dont have the right produce at home. i wish i was good at making it for the month...but oh well. we have something that works, thats good right?

anyway, tonight was shredded chicken (from the crock pot) with fries and corn. it was SOOOO yummy. a friend of mine gave me the recipe and its weight watchers friendly (for those of you who are into that). it felt so bbq-ish and like we should have been eating outside. and to top off the night, i made the pb&j sundaes again (not weight watcher friendly!). man, am i in love with those things. they are sooo yummy!

these will make your mouth water!
heres the recipe for the chicken:
  • 3-4 frozen skinless boneless chicken breasts
  • 12oz barbecue sauce
  • 1/2 cup fat-free italian salad dressing
  • 1/4 cup unpacked brown sugar
  • 2 tbsp worcestershire sauce
mix all ingredients in a bowl. place frozen chicken in crockpot. cover with sauce and cook on low for 6-8 hours. shred chicken during last hour.

and here is the recipe for the pb&j sundaes on food network. (the only thing i did different was bought strawberry ice cream instead of mixing jelly with vanilla ice cream.)

Good for you that you're cooking more! Don't worry about planning once a week- that's better than it being 5pm and not knowing what you've having for dinner. I'm all for a little planning- whatever that means for your family.

PS- Yes, we will have to hang out once we move to CA. I would love to mean Evelynn!!
